Crunchy Winter Salad
I love a good salad, but it’s so much harder to get into it in the cold winter months. You really just want a bowl of something hot and steaming, am I right? But then the craving hits; it’s cold, it’s dreary, maybe you haven’t seen the sun in a few days, and your body is yelling at you for not eating enough green things. This Crunchy Winter Salad has your back!
I love this salad because it’s filled with such a variety of things, and really does pack the biggest crunch. The dressing is just as refreshing and adds a little kick from the ginger. You can absolutely swap things out for other ingredients, like different nuts or a different dried fruit that you prefer. This salad is also colorful, which I also love. More colors the better! My only advice: Don’t try to have any important conversations while you’re eating this; you won’t be able to hear each other over the crunch!

Ingredients:
2 cups cauliflower, chopped
2 cups broccoli, chopped
1 cup shredded red cabbage
1 cup carrots, chopped
Fresh parsley, chopped, or a few tbs parsley flakes, to taste
2 celery stalks, chopped
1/2 cup raw almonds, chopped (or buy slivered almonds, save time!)
1/2 cup raw sunflower seeds
1/3 cup craisins, or other dried fruit (dates, figs, raisins, etc.)
For the vinaigrette:
3 tbs olive oil
1/2 cup lemon juice
1 tbs ginger (could use ground ginger, or fresh, peeled and grated)
2 tbs honey
1/2 tsp sea salt
Method:
Chop ingredients and add to large bowl, and toss.
In a small bowl, whisk together dressing ingredients. Add to salad bowl a little at a time, to taste.
