Blueberry Muffin Overnight Oats
Overnight oats have taken the world of breakfast trends by storm the last few years, and for good reason! It’s a pretty healthy breakfast depending on what you add, you can grab it on the go for those busy mornings, and there are SO MANY options of ingredients you can add. I’m a tad sensitive to textures, so I never really wanted to try overnight night oats when I first came across recipes for them. The one that hooked me was chocolate chip banana bread oat; dark chocolate, bananas, cinnamon..what’s not to love!
But for this recipe, we’re shining a light on one of my favorite seasonal summer fruits: blueberries! Blueberries may be small, but they sure don’t skimp on their benefits. They’re one of the top antioxidant foods and full of nutrients like fiber, vitamin C & K, and manganese. While the banana bread oats are good, this variation has become my favorite in the last few months. It’s so delicious and keeps me full longer than other oats have. Plus, it’s not overly mushy or weirdly textured when you go to eat them in the morning. If blueberries are in season when you make this, I highly recommend using fresh blueberries, but you can certainly use frozen if you don’t have fresh on hand. The cinnamon almond butter I mention in my ingredients list is so.good. But regular almond or cashew butter works just as well too. In these warmer months, I’ve been eating it cold, but when I was making this in the winter I popped it in the microwave to warm it up a bit and it’s amazing that way too!

Ingredients:
1/2 cup rolled oats
1/2 cup milk of choice - I use oat milk. You also may need to add a little to your jar, so keep it handy!
1 Tbs nut butter - my favorite is cinnamon almond butter
2 tsp maple syrup
1/2 tsp cinnamon*
1/2 tsp vanilla extract*
1 Tbs ground flax
1/4 fresh or frozen blueberries
Dash of sea salt
(Optional) granola to top off your oats in the morning if you need a little extra crunch
**I don’t usually measure these two ingredients, but it’s a good starting point if you’re not sure.
Method:
Combine all ingredients except the blueberries in a small mason jar or container, and stir well to combine.
Gently stir in the blueberries and add more milk if necessary.
Cover and refrigerate overnight or at least 4 hours.
Can be served chilled or warmed up in the microwave.
